I'm here,

My days seem to be so busy, yet at the end of the day even more needs to be done. Why can't I be one step ahead? All is well though, and since my last post a month ago we have been doing a little of this, and a little of that. Carter turned 9 months old on the 18th and I need to get him to the Dr. for a checkup. Thank goodness no shots are done at 9 months, yeah! He has changed so much since his last appointment at 6 months. He can now sit up with no problems, crawl (on all fours, and the army crawl) pull himself to a stand on anything, walk with light assistance, has two teeth, eats a variety of foods and talks up a storm! Depending upon the brand of clothing he can wear 12-18 months shirts and shorts - so he must be growing long without my noticing. It's funny that everyone comments on how big he is getting, he seems the same to me. His hair is a little thicker and longer - but still just as blond. I am sure it will change brown through when he is older - it's hard to picture him not blond though. His eyes are still as dark blue as ever, so I really hope that never changes. :)

Don has been busy studying for the GMAT (grad school entrance exam) and will take that next Thursday (Sept.2nd). Hopefully he will get a good score because he has some high standard schools he wants to apply for. We'll see! Once he finishes that test he will look for employment full time. For those who might not know, Don was laid off the last day of June. It's okay though, more of a blessing since the management he was working for were quite unruly. We have faith in the Lord and in his blessings. Faith without works is dead though, so we are trying and doing our part too to find a job. We have some great options at this time - and pretty local too so hopefully no moving till Grad school!

$3.00 Mini Golfing? Yes please!
Last month Don, Carter and I went on a little date. Right down the street from us is the local park, complete with a quaint little mini golf section. It was only $3.00. I love cheap dates! It was so muggy out, wow! You can see the sweat dripping off of Don in the pictures. Carter had fun, though it will be easier when he can walk by himself around the place. :)

If you've made it this far in the blog post - thank you! I need to post more often so I don't have to make them so long! Here is the recipe I promised earlier.
I was thinking of what to make for dinner the other day and I saw on a friends blog that she made homemade tortillas. Mmmmmm I thought! That would be good! So I cooked up a pound of lean hamburger, added some chili spices, black beans, tomatoes and green chilies. Topped with some cheese (I love cheese!) Than I made the tortillas, which were super easy!
  • 3 Cups of Flour
  • 1 1/2 tsp. salt
  • 2 tsp Baking Powder
  • 3/2 Cup shortening (crisco)
  • 3/4 Cup Hot water
Mix the first 4 together (flour will be crumbly) than add the water. Stir, knead etc.. till it is slightly elastic. Have a large skillet hot on medium heat. Divide dough into how many balls you want, depending on the size of the tortilla you want to make. Take a ball, roll it out very very thin (1/8 inch?) and throw it onto the hot pan. Wait till it starts to bubble up a little, or till your desired golden/browness. Flip it over, same on other side -- and then you're done! Repeat till all the dough is done. Simple Simple. And I LOVE that no oil is involved. Enjoy!
(tip: I like my tortillas thicker and soft - so don't roll out as thin and cook for slightly less time)
